Ingredients:
16 ounces Mueller’s Spaghetti
2 tablespoons olive oil
2 medium zucchini, sliced
2 cups fresh mushrooms, sliced
1 medium green bell pepper,
seeded and cut into thin strips
1 jar (26 ounces) marinara sauce
1/4 cup shredded Parmesan cheese
Directions:
Heat oil in a large skillet over medium-high heat. Add zucchini, mushrooms and green pepper; cook and stir until crisp-tender. Stir in marinara sauce. Bring to a boil. Reduce heat; simmer 15 minutes. Meanwhile, cook and drain the pasta. Arrange on a warm platter. Top with vegetable mixture and Parmesan cheese. Serve immediately.
